Matt's Homemade Bear Lake BreadStep 1 - About 1 cup of luke warm water, add 2 tsp. quick rise instant yeast OR two envelopes, and 1 tsp. sugar. Step 2 - 1/2 a big bowl full of unbleached flour and about 2 tsp. or so of salt. Mix salt in flour. Make a well in flour and add Step 1 into Step 2. Step 3 - Add more luke warm water to Step 2. With fork mix flour and yeast water together, then kneed. Step 4 - Flour an area on counter, then kneed dough for about 5-7 mins. (Fold dough) With hands, pull dough around to bottom to form a ball. Step 5 - Grease baking pan with olive oil or vegetable oil slightly. Flatten dough a bit, then turn around so the top of the dough has oil on it to prevent drying. Step 6 - Let dough rise [&] double its size. (About an hour) Step 7 - Once risen, punch dough down with knuckles, and spread out, then fold 5 times and roll into ball. Split dough in two. With a knife cut slits across the top one way, then the other. Step 8 - Mix 1 egg and water together, and glaze the top of the dough. Step 9 - Let dough rise again. Step 10 - Bake in a 400 oven for 1 hour. Serve Warm. You can add raisins, cinnamon, or other likes you prefer for a great tasting bread everyone will enjoy. |
